Asparagus Stir-Fry is a quick vegetable side you can make to serve with
plain white rice, whether jasmine or basmati. Asparagus is not
generally used in Indian cooking, but here's a great-tasting slightly
crunchy vegetable dish that I'm sure kids and adults would like.
Asparagus has some vital nutrients and deserves to be part of
a healthy diet. Asparagus is supposed to be very effective in
treating arthritis, infertility, and toothaches.

Ingredients
1 bunch asparagus, cut into 2-inch pieces
4-5 tsp vegetable oil
Salt to taste
For Masala
2 tsp cumins seeds (jeera)
2 tsp coriander seeds (dhania)
3-5 pepper corns
6-7 cloves
2 cardamom
pods (optional)
4-5 red chillies or 1 tsp red
chillipowder (adjust
to taste)
1/4 tsp turmeric
powder
Or you can use store-bought curry
powder.
Preparation
Grind all the masala ingredients to a coarse powder
(you can use a coffee grinder for this), and set aside.
Heat oil in a nonstick pan or and add the asparagus
along
with some salt. Stir and cover and cook on medium high heat stirring
occasionally, until tender.
Add 3-4 tsp masala powder (or as much as you like)
and 1/2 tsp oil and stir-fry
for 4-5 minutes until the raw flavor of the masala is gone.
