Cabbage-Onion Fry
Cabbage-Onion Fry is a simple and easy curry that goes well with rice
and roti.
This vegetarian/vegan curry does not require a long list of ingredients
and masalas; try it when you're tired of the regular masala curries and
want to make a quick and healthy side for your meal.

Ingredients
- 5 cups cabbage, shredded
- 2 cups onion, cut into small cubes
- 1/2 tsp mustard seeds
- Asafoetida
powder (hing), a pinch
- 1 green chilli, slit lengthwise
- 2 red chillies, broken into a few pieces
- 5-6 curry leaves
- 1/4 tsp turmeric
powder
- Salt to taste
- 5 tsp vegetable oil
Preparation
- Heat the oil in a wide skillet. Add the mustard seeds
and fry until
they start popping. Add the asafoetida, green chilli, and red chillies
and fry for a couple seconds. Add the curry leaves and fry for a
second. Add the turmeric powder and cabbage and onions and stir-fry for
a few seconds.
- Add salt and cover and cook on medium heat for 2-3
minutes or until the
cabbage and onions are tender.
- Remove the lid and saute the curry for 2 minutes.
Remove from heat.
- Serve the cabbage-onion fry with plain rice or roti.
