Cauliflower-Onion Saute is a quick vegetarian and vegan curry you can
rustle up in no time. If you're tired of your regular cauliflower
curry, try this healthy and easy recipe.

and fiber and low in calories, fat, and
cholesterol, cauliflower is a great addition
to a heart-healthy diet.

Ingredients
6 cups cauliflower, cut into small florets
2 cups onion, cut into 1/2-inch thin strips
2-3 tsp vangibhath powder (store-bought or home-made)
Heat the oil in a wide skillet. Add the asafoetida
powder and mustard seeds. As the seeds start to pop, add the curry
leaves and saute for a few seconds.
Add the onions, cauliflower, turmeric, and salt,
stir, and cover and cook on medium heat for 3-4 minutes until the
veggies are tender.
Remove the lid and saute on medium-high heat until
the cauliflower and onion are lightly browned.
Add the vangibhath powder and red chilli powder and
saute for 2 minutes. Remove the cauliflower-onion saute from heat.
Serve the cauliflower-onion saute with plain rice.
