This easy corn curry is simply delicious. Without any heavy spices,
this curry enhances the sweet taste of corn. This vegetarian side goes
well with plain rice.
Corn provide a lot of fiber and protein.

Ingredients
2 cups corn kernels, fresh (if using canned, drain
before using)
3/4 cups onion, finely chopped
2 green chillies, finely chopped
2 tbsp cilantro (coriander leaves), chopped
2 tbsp lime juice (adjust to taste)
Salt to taste
For Seasoning
4 tsp vegetable oil
1 tsp mustard seeds
5-6 curry leaves
Preparation
Heat the oil in a skillet. Add the mustard seeds and
fry until they start to pop. Add the green chillies and fry for a few
seconds. Add the curry leaves and fry for a few seconds.
Add the onions and salt and saute for about 4-5
minutes on medium heat until translucent.
Add the corn and cilantro leaves along with salt as
needed. Cover and cook on low heat for 6-7 minutes or until corn is
tender but not overcooked.
Remove the corn curry from heat, and stir in the lime
juice.
