Eggless Baking

Try these eggless baking recipes for making breads and cakes if you're a pure vegetarian or vegan. You don't have to deprive yourselves of tasty treats just because you don't eat eggs! In fact, these breads and cakes are so delicious that even egg-eaters won't know the difference.

Eggs have high levels of saturated fat and cholesterol, so if you eat eggs but want to reduce your consumption of eggs for health reasons, these eggless recipes provide a wonderful and healthy alternative.


You don't need to attend any baking schools for making these delicious cakes and pastries.

If you know what egg substitutes to use, eggless baking can be quite easy.
Egg substitutes help give baked goodies similar texture and moistness that eggs do. However, to get good results when baking with egg substitutes, it's important to understand the role eggs play in the recipe and choose the egg replacements accordingly. Eggs act as binders, leavening/rising agents, or as moistening agents.
  • For recipes requiring binders, you can use arrowroot, soy, potato starch or cornstarch powders, pureed fruits and vegetables, silken tofu, or the vegetarian gelatin - agar agar.

  • For recipes requiring leavening or rising agents, you can use baking soda, baking powder, yogurt or buttermilk, or egg-replacement powders such as Ener-G.

  • For recipes requiring moisteners, use mashed fruits, fruit juice, milk, or water.
Adding extra vegetable oil along with baking soda and baking powder also helps in getting the texture right.



Here are some egg to egg replacement ratios for your baking recipes. For 1 egg, you can, for example, substitute one of the following:
  • 1 banana
  • 2 tbsp cornstarch
  • 2 tbsp potato starch
  • 1 tbsp soy powder and 2 tbsp water
  • 2 tbsp arrowroot flour
