Okra with Tomatoes is a simple and easy curry you can make for a quick
vegetarian or vegan meal. You can serve it with rice or any Indian
flatbread.
Okra is a good vegetable to include in your vegetarian diet if you have
digestive problems because, like yogurt (curds, dahi), propagates good
bacteria in the
intestines that help digestion. Okra is also rich in essential
nutrients
like vitamin
C and
iron.
Heat oil in a skillet. Add the cumin and mustard
seeds and fry until they start to pop. Add the turmeric powder and the
onions, along wih some salt and saute on medium heat until almost
tender.
Add the okra. Sprinkle some salt and water, stir,
cover and cook on medium heat until the okra is tender (4-6 minutes),
stirring occasionally.
Add the tomatoes, garam masala, and red chilli powder
and saute on medium-high heat until the raw flavor of the masala is
gone. Stir in the cilantro leaves and remove the okra with tomatoes
from heat.
