Peanut Salad

Peanut Salad is a very nuritious snack and is great any time you want to boost your energy levels. This is an easy recipe. Peanuts (groundnuts) are rich in protein and fiber.




Servings: 4
Cooking Time: 20 minutes (not including the soaking and boiling time)

Ingredients

  • 2 cups peanuts with peel (soaked for a couple of hours and boiled with a little salt)
  • 1 cup onions, finely chopped
  • 1 cup tomatoes, finely chopped
  • 1 cup coconut, freshly grated
  • 1 tsp coriander powder (dhania)
  • 1 tsp red chilli powder
  • 5-6 curry leaves
  • Asafoetida (hing), a pinch
  • Salt to taste 3 tsp vegetable oil

Preparation

  1. Grind the coconut and red chilli powder into a coarse paste.

  2. Heat oil in a medium skillet. Add asafoetida and onions and saute until they are tsanslucent.

  3. Add the coconut paste and fry for a minute.

  4. Add the coriander powder and tomatoes and fry for a couple of minutes.

  5. Add the boiled peanuts along with the water in which they were boiled. Add salt and cook until all the flavors are combined and the water is absorbed.

  6. Garnish the peanut salad with freshly grated coconut and serve.
