This easy Potato-Onion-Bell-Pepper Saute is not only colorful but also
very healthy.
Bell-Peppers contain vitamin A and vitamin C which help strengthen the
immune system. Red bell
peppers are rich in lycopene which may promote heart health and reduce
the risk of prostate, cervical, and ovarian cancer.
Heat the oil in a nonstick skillet. Add the cumin and
mustard seeds
and as they start to brown and pop, add the curry leaves, potatoes,
onion, and bell-pepper along with
turmeric and salt. Saute for 1 minute. Cover and cook on medium heat
until almost tender.
Remove the lid and add some more oil, and saute on
medium high until browned.
Add the red chilli powder and saute for a few minutes
more until the raw flavor is gone.
Serve the potato-onion-bell-pepper saute hot with
rice and
ghee (clarified butter).
