These semolina cookies are a
delicious treat to serve with tea or coffee. These cookies are very
easy to make and stay fresh for several weeks when stored in an
airtight container.
Slivered almonds or cashews or any nuts for
decoration (optional)
Preparation
Preheat the oven to 250°.
In a bowl, beat the cream, sugar, and yogurt until
light and fluffy or use the food processor for this.
Add the all-purpose flour, semolina, baking soda, and
cardamom powder and mix to resemble a fine meal (like corn meal).
Take a spoonful of the mixture and form a tight ball
and press it to make a flat and round shape 1/2-inch in diameter.
Decorate with slivered
almonds, pressing gently. Repeat with the remaining mixture.
Bake on an ungreased cookie
sheet or baking sheet for 30-40 minutes,
until cooked but still white. Make sure they don't brown.
Let the cookies cool and harden.
Serve the semolina cookies with a hot cup of masala
chai (tea) or
coffee.
Store in an airtight container at room temperature.
