Spicy Vegetable Pasta is a tasty and healthy after-school snack for

easy vegetarian/vegan recipe you can put together very quickly. If

spicy vegetable pasta dish serves as very filling and satisfying snack
or light meal.

Ingredients
1 1/4 cups rotini pasta (you can use whole-wheat
pasta if you want)
1/2 cup onions, finely chopped
1/2 cup carrots, cut into small cubes
1/2 cup bell-pepper, cut into small cubes
1/2 tsp cumin seeds (jeera)
1/2 tsp pav-bhaji
masala powder or garam
masala
(available in Indian grocery stores)
1/4 tsp red chilli powder (optional)
3 tsp vegetable oil
1 tsp cilantro (coriander leaves)
Salt to taste
Preparation
In a large saucepan, bring about 6 cups of water to
boil (or follow the package directions for cooking the pasta). Add a
little salt if you want and add the pasta.
Boil the pasta until it's almost cooked (al dente);
should be soft but still a little chewy. Drain and cool the pasta.
Heat oil in a skillet. Add the cumin seeds and fry
until browned.
Add the onions and saute on medium heat for 2
minutes. Then add the bell-pepper and carrot with some salt and saute
until the vegetables are tender.
Add the pav-bhaji masala and red
chilli powder and
fry for 2-3 minutes.
Add the pasta and mix well and cook for a couple
minutes.
Garnish the spicy vegetable pasta with chopped
cilantro and serve immediately.
